Québec City, Tuesday, January 13, 2026 – Building on the success of its first edition, Fairmont Le Ch'teau Frontenac is proud to announce the return of the only ice restaurant in the Americas, created in collaboration with Québec City’s Hôtel de Glace. From Thursday, January 15 through Saturday, March 21, 2026, guests will once again be invited to enjoy an extraordinary gastronomic experience set within a fully sculpted snow-and-ice décor,
as the restaurant opens for a second consecutive winter season.
Blending the culinary expertise of Fairmont Le Ch'teau Frontenac with the exceptional craftsmanship of the Hôtel de Glace artisans, this new edition offers a refreshed and ever more immersive experience, where gastronomy, art, and material come together to create a truly unique winter moment. Designed as a carefully orchestrated journey, the experience unfolds from departure to return to the city. Guests depart from Fairmont Le Ch'teau Frontenac aboard a dedicated shuttle that transports them directly to the Hôtel de Glace. Upon arrival, the experience begins with a guided tour of this iconic site and its impressive ice sculptures, followed by a welcome cocktail and a three-course gourmet dinner crafted by Fairmont Le Ch'teau Frontenac’s culinary brigade, served in the heart of the ice restaurant. The evening concludes with a smooth return to the city via the provided shuttle. As seating is limited, reservations are strongly recommended.

NEW THEME : THE HÔTEL DE GLACE COMES TO LIFE
The 2026 theme, The Hôtel de Glace Comes to Life, pays tribute to all that moves, breathes, and transforms. The entire journey unfolds as a living experience where, through ice sculptures, light, and form, the ice appears to awaken and come alive. The restaurant’s décor notably features delicately sculpted vegetation, celebrating the beauty of nature. Visitors are invited on a fully immersive journey designed to create moments of wonder unlike
any other.
BOREAL MENU
To complement this theme, Fairmont Le Ch'teau Frontenac’s culinary teams have created an exclusive menu inspired by the boreal terroir and the winter season. Upon arrival, guests are offered an amuse-bouche featuring a foie gras cake pop with gingerbread and sea buckthorn. The meal continues with a sealed-crust soup showcasing duck consommé, smoked duck breast, celery, and truffle. For the main course, a boreal-crusted rack of venison is served with nutmeg-scented celeriac mousseline, braised salsify, maitake mushrooms, dried beef bacon, and a
grand veneur sauce with Gaspésie lingonberries. The experience concludes on a sweet note with a dessert composed of a Bassan chocolate fondant, sweet clover marshmallow, a creamy element and a cloudberry marmalade from Québec’s Côte-Nord, all served with a warm chocolate sauce. A true delight for the senses.
